Community Flavor: Why Bone Broth?

Broth has been used around the world for hundreds of years as a building block of the human diet; it’s an ideal food.  At its most basic form, beef or chicken bones are boiled for 24hrs or more to extract all nutrients. So why is bone broth so common? First, it tastes good.  It can be customized to your preferences, diet, and lifestyle, depending on how you make/buy your broth.  It can add richness to plain foods like rice, noodles, or soup.  Some prefer to drink it straight, warmed up, or with some salt and pepper.  If you make your own broth, you can mix it  it up with different types of bones (lamb, pork, fish, etc.) and spices of your choice.

From a Chinese Medicine perspective, bone broth builds the blood, which can be thought of as the added protein and boosted digestion.  This aids the body in creating and circulating healthy blood.  This then positively impacts immune health, reproductive health, and cardiovascular function.  Bone broth is high in collagen & gelatin, (that’s why it goes solid at room temperature) which have been shown to aid in joint health, balance skin, and heal damage to the digestion.  Trace minerals from the bones are also an added benefit!  It’s easy to digest, making it great for anyone with weak digestion or recovering from stress, surgery or illness.

Broth uses the parts of the animals and plants we normally throw in the garbage.  By saving the bones from your meat, you get a second meal out of that roast chicken!   You can save vegetable scraps (onions, carrots, garlic, broccoli/cauliflower stems) to add even more nutrients and varied flavor to the broth.
